A smart, Scandinavian tradition to beat the bread
You might be thinking, “What do you mean ‘bread without the bread’?” Well, many people now have gluten allergies and having foods with yeast isn’t so healthy for us anyways, so we have an amazing alternative: in Norwegian, it’s called “knekkebrød.” The closest translation we found was “crisp bread,” but there are many versions out there. We make a special type that is filled with healthy ingredients and is sure to satisfy.
It’s a type of dry bread made out of seeds and grains that doesn’t use yeast. It can be stored for a long time, and this version hardly has any gluten (and can be made gluten free) and no dairy products. It also fits the popular “low carb” health concept that many people are conscious about.
Up here in Scandinavia, it’s very normal to have bread for breakfast and lunch, all the time…which means a LOT of bread. This recipe of “knekkebrød” is a way of fitting into the daily habits and traditions we have without getting a lot of things we don’t want in our diets like white flour and yeast. It’s an easy step to changing your lifestyle to something healthier while still satisfying customary food cravings and habits. It sure works for us!
Let’s just call it Live’s Super Dry-Bread for now. I mix up the recipe all the time, so feel free to play around with it; but here is the basis:
2 dl sunflower seeds
2 dl oats (or without if you want it gluten-free, or get gluten-free oats)
2 dl flour (I used 1 dl quinoa flour, and 1 dl wholemeal rye flour)
1 dl flax seeds
1 dl sesame seeds
A little hemp seed
A little chia seed
A little honey
A quick splash of oil (whatever oil you normally use )
4 dl water
Mix it all up, spread it on a baking sheet, and bake it in the oven for 180 degrees for about 45 min – 1 hour.(Sometimes, I take a lower temperature and have it in there longer, keeping it mostly raw. If I get one of those dehydrators, I think I´ll try it with that, too.)
It’s easy, and SOOO GOOD!!! What a simple way to get some superfoods in your diet!
Put on a good topping, and voila, enjoy!
